Vegetarian “Schnitzel” with paprika sauce
Hungarian type
The sauce is just soooo delicious!
1 tablespoon butter / margarine
1-2 onions – cut into rings
1 garlic clove – dice finely
1 red pepper – cut into fine strips
1/2 pakrika yellow – cut into fine strips
100 g mushrooms – cut into slices
2 carrots – cut into small sticks
1 tablespoon of flour
150 ml white wine/ rose
2 -3 tablespoons tomato paste
400 ml broth
salt, pepper, paprika powder, chili, sth. harissa, cumin
Steam all vegetables.
Fry the tomato paste briefly and stir it in the flour.
Deglaze with stock and wine and let it simmer for about 15 minutes.
We serve vegetarian schnitzel with it (I like Rügenwalder or Valess)
and oven fries…
