Vegetarian Bolognese

World’s best vegetarian bolognese.

250g natural tofu – alternative: ready made vegetarian minced meat
1 onion – cut into cubes
1-2 garlic cloves – cut into cubes
50-60ml olive oil
3-4 tbsp’s tomato paste
150g strained tomatoes
150ml red wine (you can of course also use water/ vegetable broth)
1 tsp sugar / agave syrup
oregano, pepper, salt, basil

Crumble the tofu with a fork or with your hands (works best for me) and fry it for a few mintutes – stirring constantly
The tofu should already have taken on some color. Add the onions and fry them for about 2-3 minutes.
Then fry the garlic as well. Add the tomato paste and fry everything for a few minutes.
Deglaze it with the red wine and let it boil down. Season it with oregano, sugar/agave syrup and add the strained tomatoes and let it simmer a little while.
Season it again with salt and pepper.
Pour the sauce over boiled noodles and garnish the dish with basil.
