Peach Thyme Vanilla Jam
What could be better than a piece of homemade bread (spelt bread can also be found here in the blog) with peach jam just out of the pot – mmhh.
1 kg peaches – already skinned and pitted
2 packs Bourbon vanilla sugar / fresh vanilla pulp is also possible
Lemon juice
2 teaspoons dried thyme / or also fresh
500 g gelling sugar 2:1
Gently carve the peaches crosswise with a sharp knife and pour boiling water over them.
After a short time, they can be skinned well. Then remove the seeds and cut the pulp into small pieces.
Put the peaches and the rest of the ingredients in a blender and mix everything well for a few minutes – you can also use a hand blender (but it takes longer).
Boil the mixture in a pot and let it boil down while stirring constantly for 3-4 minutes.
Pour it into boiled glasses and close them immediately.
It makes about 3-4 glasses of this delicious jam.
