Mango rum jam
A real dream – homemade bread (rye bread with grains can also be found here on the blog) with mango rum jam… mmhh…
1 big ripe mango ( peeled and seeded 400 g ) – cut into small pieces
400 g sugar
8 g Gelierfix 1:1
1 tsp lemon juice
1-2 tsp rum (depending on taste)
Mix the mango pieces with the Gelierfix and 3 tbsp of the weighed-out sugar in a saucepan.
Leave to infuse for approx. 5-10 minutes and then blend with a hand blender until a smooth, homogenous mixture is formed.
Now bring the mixture to the boil, stirring constantly to ensure that nothing burns.
As soon as it boils, stir in the remaining sugar and boil for 3-4 minutes, stirring as always.
Just before the end, add the lemon juice and rum.
Pour into boiled glasses and seal immediately.
This quantity makes about 2 jars of this delicious jam.
